Late last year, we got Simon and Tom from Caveau (1 hat restaurant in Wollongong) to turn our free-range pork bones into a hearty nutritious bone broth. This broth is a must-have in all kitchens and is great to add to soups, sauces and stews or even just drank on its own. (A lot of intermittent fasting guides recommends swapping out a meal now and then for a cup of chemical-free bone broth). So what can be better than locally produced, chemical-free, pork bone broth, which also supports Green Connect and the local community? The bone broth is available in 500g and 1kg frozen vacuum packs to be picked up from our Green Connect Office in Port Kembla. Here are some recipes of what you can do with the broth. We offer free-range pork, raised in the best possible conditions, every three months. Our pigs were raised on our permaculture farm in Warrawong, where they moved about different areas of the farm and feasted on leftover fruit, vegetables and plants – which also helps us to cultivate the soil. Our pigs are rotated so they always have fresh pasture. They live in the sunshine, roll in mud, and act like pigs. Their addition gives us the capacity to convert food waste into meat. They also help us control weeds and vegetable stubble in our cropping areas, without synthetic chemicals. They spare us from fungal issues that can occur from stubble build up. They fertilize our soil with manure. Their digging forces and mixes organic matter deep into the ground. We raise them seasonally, so meat is available every 3 months. We offer pigs for wholesale or to be purchased whole or half.
