Cauliflower

Cauliflower is a culinary shapeshifter. It can be prepared in an impressive number of ways and it’s neutral, slightly nutty flavour absorbs other flavours easily, making it an excellent side or feature veg in many different styles of meals. 

A member of the brassica family, cauliflowers are related to broccoli, cabbage, turnips and more. The white head or ‘curd’ is actually an immature cluster of flowers. Don’t discard the stem or leaves as they can be eaten too!

Although you might not guess it because of its plain white colour, cauliflower is an incredibly healthy vegetable with high levels of fibre, antioxidents, and many vitamins and minerals. It is a great low calorie substitue for grains and legumes..

Storage & Preparation

To maintain maximum freshness, store your cauliflower in a slightly open, loosely wrapped plastic bag in your veggie crisper. Placing it head-down can also help to reduce condensation on the white curd. They should stay fresh this way for up to a week or more.

Cauliflower is delicious and crunchy when eaten raw. Its texture becomes semi-firm and tender when cooked and it readily absorbs accompanying flavours, making it an incredible versatile ingredient. Try pureeing it for a sauce, chopping into rice, adding it to a curry, soup, stir-fry, or roasting it in florets or whole!
