Mizuna Salad

Ingredients
- 1 large bunch fresh mizuna lettuce, washed, dried and chopped
- 1/2 tart sweet apple, thinly sliced into matchsticks
- 2 tablespoons sultanas
- 2 tablespoons sunflower seeds
Dressing:
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dijon mustard
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey (or maple syrup for vegan option)
- pinch Kosher salt
- pinch black pepper
Method
- Combine the mizuna, apples, raisins and sunflower seeds in a large bowl.
- Whisk together all the dressing ingredients in a small bowl or jar. Pour over the salad and toss until well combined.
- Serve and enjoy once dressed.
