Stewed Green Beans, Carrots and Potatoes

  • 1 cup onions, shredded
  • 1 cup parsley, chopped
  • 4 carrots, cut in thin rings
  • 450g green beans 
  • 4 potatoes, cubed
  • 4 tomatoes, grated or chopped 
  • 2 cups water
  • Olive oil
  • Salt and pepper, to taste


  1. Heat olive oil in a pot. Add onions and sauté for 2 minutes. Add parsley, carrots, beans and potatoes. Mix well.
  2. Add salt, pepper, tomatoes and water. Simmer for 40 minutes.
