Stewed Green Beans, Carrots and Potatoes

Ingredients
- 1 cup onions, shredded
- 1 cup parsley, chopped
- 4 carrots, cut in thin rings
- 450g green beans
- 4 potatoes, cubed
- 4 tomatoes, grated or chopped
- 2 cups water
- Olive oil
- Salt and pepper, to taste
Method

Heat olive oil in a pot. Add onions and sauté for 2 minutes. Add parsley, carrots, beans and potatoes. Mix well.
- Add salt, pepper, tomatoes and water. Simmer for 40 minutes.
