Watercress, Apple, Pear and Almond Salad

  • 1 bunch watercress
  • 1 green apple
  • 1 pear
  • 1 handful almonds

Salad Dressing:

  • 2 tablespoons olive oil
  • 1 lemon juice
  • 1 teaspoon seeded mustard
  • 1 tablespoon honey
  • 1 teaspoon mayonnaise
  • saltto taste


  1. Trim watercress and rinse well in sink of cold water. Remove any limp sprigs or yellow leaves. Drain and place in colander to dry.
  2. Slice apple and pear into matchsticks. Place in a bowl of salted cold water to stop oxidation.
  3. Dry toast almonds in a small fry pan over medium heat for 1-2 minutes. Remove and roughly chop.
  4. Mix together in a small mixing bowl the olive oil, juice of 1 lemon, seeded mustard, honey, mayonnaise and salt. Mix until well combined.
  5. Remove apple and pear from cold water and pat dry.
  6. Place all ingredients in a large serving bowl, drizzle seeded mustard dressing and toss together.
